Slow cooked in a lemon grass chicken broth with aged manchego cheese
Arugula and Sherry Tomato Jam
Baby arugula tossed in house made sherry vinaigrette along with a sherry-tomato jam, Murcia al Vino cheese and a crispy prosciutto chip
IPA Grilled Quail
Marinated and grilled with IPA beer served with grilled treviso, white bean cassoulette, and a grilled meyer lemon sauce
Seared Lamb Loin
Seared medium rare with an Earl Grey tea and shitake mushroom risotto with a roasted chestnut puree

Rafael Lopez & Harmony Grill
Rafael comes from the Peninsula Hotel Chicago where he worked under Executive Chef Terry Crandall as Chef de Partie for the Lobby Restaurant. During his tenure at the Peninsula Rafael was involved with a Culinary series that took place in Carmel, California on the Luxurious resort Quail Lodge. The Culinary Series was Prix Fixe menu that featured recipes from the 2007 Peninsula Cook Book which focused on Exotic tea flavors.
